INSTANT POT CARNE ASADA TACOS

FAST, EASY, HEALTHY + DELISH

If you’ve been following me on social media for a while, then you know I have a few rules for cooking meals: 1. They need to take less than 30 minutes, 2. Have under 10 ingredients, and 3. Be healthy and delish. Tossing the Trader Joe’s Carne or Pollo Asada meat in the Instant Pot or Crock Pot makes this recipe extra-easy. This meal is in our weekly rotation, so I hope you enjoy it as much as we do.

INGREDIENTS:

  • 1 package Carne or Pollo Asada Meat from Trader Joe’s

  • Tortillas - I like Siete Food Grain-Free, but you do you

  • 1 Can Refried Beans - Healthy Tip: Refried Black Beans are healthier than regular Refried Beans made with Kidney Beans. I usually find them in the organic food aisle

  • Shredded Cabbage

  • Avocado, Diced

  • Feta Cheese

  • Cilantro

  • Trader Joe’s Cilantro Dressing

  • Pink Himalyan Salt & Pepper

DIRECTIONS:

Place meat in Instant Pot or Crock Pot. Add 1/2 cup water.

Cook Meat: Hit Meat/Poultry for Instant Pot (30 minutes cook time) or cook on High for 3 hours for Crock Pot.

When there’s 2-3 minutes left on the meat cooking, add your Tortillas to the oven to warm and microwave the Refried Black Beans for 1 minute.

Remove meat and use a fork and knife to pul apart - it will shred easily.

Plate your tacos: Schmear Refriend Beans in the middle of your Tortilla, add Meat, Diced Avocado, Shredded Cabbage, Feta and Cilantro. Top with Cilantro Dressing, Salt & Pepper to taste.
